How To Make Pesto Crusted Keto Salmon

Delicious keto-friendly salmon fillets coated in homemade pesto and baked to perfection.

Ingredients

  • 4 salmon fillets, skin removed
  • 1/2 cup of fresh basil leaves
  • 1/4 cup of pine nuts
  • 2 cloves of garlic
  • 1/4 cup of grated parmesan cheese
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a food processor, combine the basil leaves, pine nuts, garlic, parmesan cheese, olive oil, and salt and pepper. Blend until a pesto sauce forms.

  3. Place the salmon fillets on the prepared baking sheet and spread the pesto mixture evenly over the top of each fillet.

  4. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
