Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1/2 cup pesto
  • 1 can (14 ounces) cannellini beans, drained and rinsed
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Season the salmon fillets with salt and pepper.

  3. In a baking dish, spread a thin layer of pesto on the bottom.

  4. Place the seasoned salmon fillets on top of the pesto.

  5. Spread the cannellini beans evenly over the salmon.

  6. Pour the remaining pesto over the beans and salmon.

  7. Sprinkle the shredded mozzarella cheese over the top.

  8. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the cheese is golden and bubbly.

  9. Garnish with fresh basil leaves before serving.
