Ingredients

  • 4 salmon fillets
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots), sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat grill to medium-high heat.

  2. In a small bowl, whisk together miso paste, soy sauce, honey, and sesame oil.

  3. Season salmon fillets with salt and pepper, then brush with miso glaze.

  4. Place salmon on the grill, skin side down, and cook for 4-5 minutes per side, or until cooked through.

  5. In the meantime, heat a large skillet over medium heat and add a drizzle of oil.

  6. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.

  7. Add the mixed vegetables to the skillet and cook for 5-6 minutes, until tender-crisp.

  8. Season vegetables with salt and pepper to taste.

  9. Serve grilled salmon over miso vegetables, garnished with sesame seeds and green onions.
