How To Make Russet Potato and Cheddar Soup Recipe

Ingredients

  • 6 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • 2 cups of shredded cheddar cheese
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until soft.

  2. Add diced potatoes and vegetable broth. Bring to a boil and then reduce heat to low and let simmer for 25-30 minutes or until potatoes are soft.

  3. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  4. Add heavy cream and shredded cheddar cheese. Stir until cheese is melted and fully combined.

  5. Season with salt and pepper to taste.

  6. Serve hot with some crusty bread.
