How To Make Bennigans Loaded Baked Potato Soup Recipe
A hearty and creamy soup packed with potatoes, bacon, and cheddar cheese.

Ingredients
- 4 large russet potatoes, peeled and diced
- 6 slices bacon, chopped
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped scallions and additional bacon for garnish
Instructions

In a large pot, cook bacon until crisp. Remove from pot and set aside, leaving bacon grease in pot.

Add onions and garlic to pot and cook until onions are translucent.

Add diced potatoes and chicken broth to pot. Bring to a boil and then reduce heat to medium-low and simmer until potatoes are tender.

Use an immersion blender to blend soup until smooth.

Stir in milk, cheddar cheese, and sour cream until cheese is melted and soup is heated through.

Season with salt and pepper to taste.

Serve hot, topped with chopped scallions and additional bacon.
