How To Make Make-Ahead Mashed Potatoes

Ingredients

  • 2 pounds of Yukon Gold potatoes
  • 1/2 cup of milk
  • 4 tablespoons of butter
  • 1/4 cup of sour cream
  • Salt and pepper to taste
  • Chopped chives for garnish (optional)

Instructions

  1. Peel the potatoes and cut them into chunks. Place them in a large pot and cover with water.

  2. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.

  3. Drain the potatoes and return them to the pot.

  4. Add the milk, butter, and sour cream to the pot. Use a potato masher or electric mixer to mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

  5. If serving immediately, transfer the mashed potatoes to a serving dish and garnish with chopped chives.

  6. If making ahead, transfer the mashed potatoes to a greased baking dish and cover with foil. Refrigerate for up to 24 hours.

  7. When ready to serve, preheat the oven to 350°F (175°C). Remove the foil from the baking dish and bake for 25 minutes, or until heated through.

  8. Garnish with chopped chives before serving, if desired.
