How To Make Warm new potatoes with cured ham & chives
If you didn’t already know, new potatoes are spuds harvested before they’re fully grown. As a result, they are small, tender, and thin-skinned. And just like mature-potatoes, you can turn these tubers into the perfect side dish for fish, chicken, and more! They’re delicious when roasted or boiled with even just a few herbs and spices. Ingredients
- 1 lb new potatoes, halved
- 4 oz cured ham, sliced
- 2 tbsp chives, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Place the new potatoes in a pot of boiling salted water and cook until tender, about 10-15 minutes. Drain and set aside.

Heat the olive oil in a large skillet over medium heat. Add the sliced ham and cook until crispy, about 5 minutes.

Add the cooked potatoes to the skillet with the ham and toss to combine. Cook for an additional 5 minutes, until the potatoes are crispy and golden.

Remove from heat and sprinkle with chopped chives. Season with salt and pepper to taste.
