Ingredients

  • 1 lb new potatoes, halved
  • 4 oz cured ham, sliced
  • 2 tbsp chives, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Place the new potatoes in a pot of boiling salted water and cook until tender, about 10-15 minutes. Drain and set aside.

  2. Heat the olive oil in a large skillet over medium heat. Add the sliced ham and cook until crispy, about 5 minutes.

  3. Add the cooked potatoes to the skillet with the ham and toss to combine. Cook for an additional 5 minutes, until the potatoes are crispy and golden.

  4. Remove from heat and sprinkle with chopped chives. Season with salt and pepper to taste.

  5. Serve the warm new potatoes with cured ham and chives as a delicious appetizer or side dish.
