How To Make Sichuan Pork, Broccoli & Cashew Stir-Fry

Serves:

Ingredients

  • 1 lb pork tenderloin, sliced into thin strips
  • 1/4 cup soy sauce
  • 2 tbsp Sichuan peppercorns, crushed
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 cups broccoli florets
  • 1/2 cup cashews, toasted
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 2 green onions, sliced

Instructions

  1. In a bowl, marinate the pork strips in soy sauce and crushed Sichuan peppercorns for 10 minutes.

  2. Heat the vegetable oil in a large skillet over high heat. Add the marinated pork and stir-fry until cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the minced garlic and ginger. Stir-fry for 1 minute.

  4. Add the broccoli florets and stir-fry for another 3-4 minutes, until crisp-tender.

  5. Return the cooked pork to the skillet and add the toasted cashews.

  6. In a small bowl, mix together the rice vinegar and honey. Pour the mixture over the stir-fry and toss to coat.

  7. Cook for an additional 2 minutes, until everything is heated through and well combined.

  8. Garnish with sliced green onions before serving.
