How To Make Sichuan Pork, Broccoli & Cashew Stir-Fry

Serves:
Ingredients
- 1 lb pork tenderloin, sliced into thin strips
- 1/4 cup soy sauce
- 2 tbsp Sichuan peppercorns, crushed
- 2 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 cups broccoli florets
- 1/2 cup cashews, toasted
- 2 tbsp rice vinegar
- 1 tbsp honey
- 2 green onions, sliced
Instructions

In a bowl, marinate the pork strips in soy sauce and crushed Sichuan peppercorns for 10 minutes.

Heat the vegetable oil in a large skillet over high heat. Add the marinated pork and stir-fry until cooked through. Remove from the skillet and set aside.

In the same skillet, add the minced garlic and ginger. Stir-fry for 1 minute.

Add the broccoli florets and stir-fry for another 3-4 minutes, until crisp-tender.

Return the cooked pork to the skillet and add the toasted cashews.

In a small bowl, mix together the rice vinegar and honey. Pour the mixture over the stir-fry and toss to coat.

Cook for an additional 2 minutes, until everything is heated through and well combined.

Garnish with sliced green onions before serving.
