How To Make Mapo Tofu

Ingredients
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup doubanjiang (fermented broad bean paste)
- 1 tablespoon Sichuan peppercorns
- 1/2 pound ground pork
- 1 cup chicken or vegetable broth
- 2 tablespoons soy sauce
- 2 teaspoons cornstarch, dissolved in 2 tablespoons water
- 1 block (14 ounces) firm tofu, cubed
- 2 green onions, chopped
- Steamed rice, for serving
Instructions

Heat vegetable oil in a wok or large skillet over medium heat. Add minced garlic and ginger, and stir-fry for 1-2 minutes until fragrant.

Add doubanjiang and Sichuan peppercorns to the wok, and stir-fry for another minute.

Add ground pork to the wok and cook until browned and cooked through, breaking it up with a spoon as it cooks.

Pour in chicken or vegetable broth and soy sauce, and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld together.

Add the cornstarch mixture to the wok and stir well. Cook for another minute until the sauce thickens.

Gently add the cubed tofu to the wok and stir to coat it with the sauce. Let it simmer for 5 minutes to soak in the flavors and heat through.

Sprinkle chopped green onions over the tofu. Serve hot with steamed rice.
