Ingredients

  • 1 small celeriac, peeled and julienned
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • 2 green onions, thinly sliced
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, honey, salt, and pepper.

  2. Add the julienned celeriac, green onions, and parsley to the bowl and toss until well coated in the dressing.

  3. Refrigerate for at least 30 minutes to allow the flavors to develop before serving.
