How To Make Pork Ragout with Carrots & Cumin

If you didn’t already know, pork tenderloin is one of the leanest cuts of meat that you can possibly find. Despite the lack of fat though, it doesn’t fall behind in terms of texture. Ingredients

  • 1.5 lbs pork shoulder, cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the pork cubes and cook until browned on all sides. Remove the pork from the pot and set aside.

  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

  3. Add the sliced carrots to the pot and cook for a few minutes until they start to soften.

  4. Sprinkle the ground cumin and paprika over the vegetables. Stir to coat evenly.

  5. Add the diced tomatoes and chicken broth to the pot. Return the browned pork cubes to the pot as well. Season with salt and pepper to taste.

  6. Cover the pot and simmer on low heat for 2 hours, stirring occasionally, until the pork is tender and the flavors have melded together.

  7. Serve the pork ragout hot, garnished with freshly chopped parsley.
