Ingredients

  • 2 lbs. boneless pork loin roast
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1 tsp. dried thyme
  • Salt and pepper, to taste
  • 1 tbsp. olive oil
  • 2 apples, peeled and chopped
  • 1/4 cup chopped pecans
  • 1/4 cup dried cranberries
  • 1/4 cup brown sugar
  • 1 tsp. ground cinnamon

Instructions

  1. Preheat oven to 375°F.

  2. In a small bowl, mix together garlic powder, onion powder, smoked paprika, dried thyme, salt, and pepper. Rub the spice mixture all over the pork roast.

  3. In a skillet, heat olive oil over medium heat and cook the apples until soft, about 5 minutes. Remove from heat and stir in pecans, dried cranberries, brown sugar, and cinnamon.

  4. Cut a slit in the center of the pork roast and stuff with apple mixture. Use toothpicks to secure the opening.

  5. Place pork roast in a baking dish and bake for 1 hour 30 minutes, or until a meat thermometer reads 145°F.

  6. Let the pork rest for 10 minutes before slicing and serving.
