How To Make Ground Pork and Apple Stuffed Acorn Squash Recipe

Savoury ground pork and sweet apples stuffed inside roasted acorn squash.

Ingredients

  • 2 acorn squash, halved and seeded
  • 1 tbsp olive oil
  • 1 lb ground pork
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 apple, peeled and chopped
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Brush the inside of the halved acorn squash with olive oil and sprinkle with salt and pepper.

  2. Roast squash in the oven for 20 minutes.

  3. Meanwhile, heat a large skillet over medium heat. Add the ground pork and cook until browned. Drain any excess fat.

  4. Add the onion, garlic, apple, thyme, salt, and pepper to the skillet. Cook for 5 minutes until onions are translucent.

  5. Mix in breadcrumbs and Parmesan cheese.

  6. Scoop the pork mixture into the roasted acorn halves.

  7. Place the stuffed acorn squash back in the oven and bake for another 30-40 minutes or until squash is tender and pork is cooked through.
