How To Make Lemon & Sage Stuffed Loin of Pork

Ingredients
- 1.5 kg loin of pork
- 2 lemons, zested and juiced
- 4 cloves of garlic, minced
- 8 fresh sage leaves, chopped
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions

Preheat the oven to 180°C (350°F).

In a small bowl, mix together the lemon zest, lemon juice, minced garlic, chopped sage leaves, salt, and pepper.

Make a lengthwise slit in the pork loin, creating a pocket for the stuffing.

Stuff the pork loin with the lemon and sage mixture, pressing it in firmly.

Season the outside of the pork loin with salt, pepper, and drizzle with olive oil.

Place the stuffed pork loin in a roasting pan and roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 70°C (160°F).

Remove the pork loin from the oven and let it rest for 10 minutes before slicing.

Serve the lemon and sage stuffed loin of pork with your favorite sides.
