Ingredients

  • 4 bone-in pork chops
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 apples, cored and sliced
  • 1 onion, sliced
  • 2 sweet potatoes, peeled and cubed
  • 1/4 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the pork chops with salt and pepper.

  3. Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. Add the pork chops and sear for 2-3 minutes on each side until browned.

  5. Remove the pork chops from the skillet and set aside.

  6. In the same skillet, add the apples, onions, and sweet potatoes.

  7. Cook for 5-7 minutes until the onions are softened.

  8. Add the chicken broth, Dijon mustard, and dried thyme to the skillet.

  9. Stir well to combine.

  10. Return the pork chops to the skillet, nestling them among the vegetables.

  11. Dot the top of each pork chop with butter.

  12. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the pork chops are cooked through and the sweet potatoes are tender.

  13. Serve the pork chops with the apples, onions, sweet potatoes, and pan juices.
