Ingredients

  • 1 (2-pound) pork loin
  • 1 cup Guinness beer
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the pork loin with salt and pepper, then place in a roasting pan.

  3. In a small saucepan, combine the Guinness, honey, Dijon mustard, minced garlic, and dried thyme. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally.

  4. Pour the Guinness sauce over the pork loin, making sure it is well coated.

  5. Roast the pork loin in the preheated oven for 1 hour, or until the internal temperature reaches 145°F (63°C) for medium doneness.

  6. Baste the pork with the glaze every 15 minutes during cooking.

  7. Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.

  8. Serve the Guinness & Honey Glazed Pork Loin slices with the remaining glaze.
