How many dishes can you make with ground pork? Quite a handful, actually. You can put together a good meal even if you only have this kind of meat in your freezer. Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 2 tbsp tomato paste
  • 1 tbsp chilli powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.

  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until vegetables are tender.

  3. Stir in the diced tomatoes, kidney beans, tomato paste, chilli powder, cumin, paprika, oregano, salt, and pepper.

  4. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook for 1 hour, stirring occasionally.

  5. Taste and adjust seasonings if needed. Cook for an additional 30 minutes uncovered to thicken the sauce.

  6. Serve hot with optional toppings like shredded cheese, sour cream, and chopped cilantro.
