Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Heat a large pot over medium heat. Add the ground beef and cook until browned.

  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are soft, about 5 minutes.

  3. Stir in the kidney beans, diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper.

  4. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for 1 hour, stirring occasionally.

  5. Serve hot with a side of rice or cornbread. Enjoy!
