Ingredients

  • 4 large potatoes
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Shredded cheese, sour cream, and chopped green onions for topping

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes, prick them with a fork, and place them on a baking sheet. Bake for 45-50 minutes or until tender.

  2. While the potatoes are baking, heat a large skillet over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is softened.

  3. Drain any excess fat from the skillet. Stir in the diced tomatoes, kidney beans, chili powder, cumin, paprika, oregano, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally.

  4. Once the potatoes are done, remove them from the oven and let them cool slightly. Slice them open lengthwise, and fluff the insides with a fork.

  5. Spoon the chili con carne over the potatoes, and top with shredded cheese, sour cream, and chopped green onions.

  6. Serve hot and enjoy!
