Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust according to preference)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, sliced jalapeños

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion, minced garlic, and diced red bell pepper to the pot. Cook until vegetables are softened.

  3. Stir in the diced tomatoes, kidney beans, black beans, beef broth, tomato paste, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Bring to a simmer.

  4. Reduce heat to low, cover, and let the chili simmer for at least 1 hour, stirring occasionally.

  5. Taste and adjust seasoning as needed.

  6. Serve hot with desired toppings.
