Ingredients

  • 1.5 lbs beef, diced
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tomatoes, diced
  • 2 jalapeno peppers, sliced
  • 2 Anaheim peppers, diced
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 cup beef broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the onions and garlic, sauté until translucent.

  2. Add the beef to the skillet and cook until browned on all sides.

  3. Stir in the tomatoes, jalapeno peppers, Anaheim peppers, cumin powder, and chili powder. Cook for another 5 minutes.

  4. Pour in the beef broth, season with salt and pepper, and bring to a simmer. Reduce the heat to low, cover, and let it simmer for 1 hour or until the beef is tender.

  5. Serve the Carne con Chile hot, garnished with fresh cilantro. It can be enjoyed with rice or tortillas.
