Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 500g ground beef
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1 can (400g) diced tomatoes
- 1 can (400g) kidney beans, drained and rinsed
- 1 cup beef broth
- Salt and pepper, to taste
- Chopped fresh cilantro, for garnish
- Grated cheddar cheese, for topping
Instructions

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, and bell peppers. Cook until the vegetables are softened, about 5 minutes.

Add the ground beef to the pot and cook until browned, breaking it up into small pieces with a wooden spoon.

Stir in the smoked paprika, cumin, and chili powder, coating the meat and vegetables evenly.

Add the diced tomatoes, kidney beans, and beef broth to the pot. Season with salt and pepper to taste.

Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 1 hour, stirring occasionally.

Serve the smoky chilli con carne hot, garnished with fresh cilantro and grated cheddar cheese. It can be enjoyed on its own or with rice or cornbread.
