Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 500g lean minced beef
  • 2 tsp chili powder
  • 1 tsp cumin powder
  • 1 can (400g) diced tomatoes
  • 1 can (400g) kidney beans, rinsed and drained
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell peppers and cook until softened.

  2. Add minced beef to the pot and cook until browned, breaking it up with a spoon.

  3. Stir in chili powder and cumin powder, cook for a minute.

  4. Add diced tomatoes and kidney beans to the pot and bring to a simmer. Cover and let it cook for 1 hour, stirring occasionally.

  5. Season with salt and pepper to taste.

  6. Serve the healthy chili con carne with rice, tortilla chips, or on its own. Enjoy!
