How To Make Healthy Chilli Con Carne

Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 500g lean minced beef
- 2 tsp chili powder
- 1 tsp cumin powder
- 1 can (400g) diced tomatoes
- 1 can (400g) kidney beans, rinsed and drained
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell peppers and cook until softened.

Add minced beef to the pot and cook until browned, breaking it up with a spoon.

Stir in chili powder and cumin powder, cook for a minute.

Add diced tomatoes and kidney beans to the pot and bring to a simmer. Cover and let it cook for 1 hour, stirring occasionally.

Season with salt and pepper to taste.

Serve the healthy chili con carne with rice, tortilla chips, or on its own. Enjoy!
