Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 6 cups vegetable broth
  • 8 oz oyster mushrooms, sliced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 tbsp soy sauce
  • 2 tbsp cornstarch diluted in 2 tbsp water
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium-low heat. Add onions and garlic, sauté for 2-3 minutes until fragrant.

  2. Add the vegetable broth, oyster mushrooms, carrots, celery, dried thyme, salt, and pepper. Bring to a boil and let it simmer for about 20 minutes until vegetables are tender.

  3. Mix in soy sauce, cornstarch mixture, and let it cook for another 5-7 minutes until the soup is slightly thickened.

  4. Garnish with parsley and serve hot.
