How To Make Oyster Mushroom Soup Recipe
A comforting and delicious soup made with oyster mushrooms and vegetables.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 6 cups vegetable broth
- 8 oz oyster mushrooms, sliced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1 tbsp soy sauce
- 2 tbsp cornstarch diluted in 2 tbsp water
- Fresh parsley, chopped for garnish
Instructions

In a large pot, heat the olive oil over medium-low heat. Add onions and garlic, sauté for 2-3 minutes until fragrant.

Add the vegetable broth, oyster mushrooms, carrots, celery, dried thyme, salt, and pepper. Bring to a boil and let it simmer for about 20 minutes until vegetables are tender.

Mix in soy sauce, cornstarch mixture, and let it cook for another 5-7 minutes until the soup is slightly thickened.

Garnish with parsley and serve hot.
