  • 1 package of enoki mushrooms, finely chopped
  • 1/2 cup of all-purpose flour
  • 1/2 cup of milk
  • 2 eggs
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 2 tbsp of vegetable oil

Instructions

  1. In a medium bowl, whisk together the flour, milk, eggs, salt, and pepper.

  2. Stir in the chopped enoki mushrooms.

  3. Heat a large non-stick skillet over medium-high heat and add the vegetable oil.

  4. Spoon 1/4 cup of the batter per pancake onto the skillet.

  5. Cook the pancakes for 2-3 minutes on each side, until golden brown.
