How To Make Sausage Soup

Ingredients
- 1 lb sausage, casings removed
- 1 onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 4 cups chicken broth
- 1 cup water
- 1 can diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions

In a large pot, brown the sausage over medium heat until cooked through. Remove from pot and set aside.

In the same pot, add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender.

Add the cooked sausage back to the pot and pour in the chicken broth, water, diced tomatoes, dried basil, and dried oregano. Season with salt and pepper.

Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.

Stir in the fresh spinach and cook for an additional 5 minutes until wilted.
