Ingredients

  • 1 large celeriac
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup walnuts, chopped
  • 1/2 cup blue cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Scrub the celeriac thoroughly to remove any dirt. Trim off the root and stem ends. Leave the skin intact.

  3. Rub the celeriac with olive oil, salt, and black pepper.

  4. Place the celeriac on a baking sheet and bake for 1 hour 30 minutes or until tender when pierced with a fork.

  5. Remove the celeriac from the oven and let it cool for a few minutes.

  6. Cut the celeriac into thick slices and arrange them on a serving platter.

  7. Sprinkle the chopped walnuts and crumbled blue cheese over the celeriac slices.

  8. Place the platter under the broiler for a few minutes until the cheese is melted and bubbly.

  9. Garnish with fresh parsley and serve hot.
