Ingredients

  • 1 celeriac, peeled and julienned
  • 50g Parmesan cheese, shaved
  • 50g walnuts, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the celeriac, Parmesan, walnuts, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve chilled and enjoy!
