How To Make Salt-baked celeriac & brown butter

Ingredients
- 1 large celeriac, scrubbed and trimmed
- 4 cups coarse salt
- 1/2 cup unsalted butter
- Freshly ground black pepper
- Chopped parsley for garnish
Instructions

Preheat the oven to 400°F.

Place the celeriac in a baking dish and cover it completely with the coarse salt.

Bake for 1 hour, or until the celeriac is tender when pierced with a knife.

While the celeriac is baking, melt the butter in a small saucepan over medium heat until it turns light brown and smells nutty.

Remove the celeriac from the oven and let it cool for a few minutes.

Carefully remove the salt crust and cut the celeriac into thick slices.

Drizzle the brown butter over the celeriac slices and season with freshly ground black pepper.

Garnish with chopped parsley and serve.
