Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 turnips, peeled and cubed
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.

  2. Add the beef and brown on all sides, about 5 minutes.

  3. Remove the beef and set aside.

  4. Add the onion and garlic to the pot and sauté until softened.

  5. Add the turnips, potatoes, and carrots to the pot and cook for 5 minutes.

  6. Add the thyme, rosemary, beef broth, and beef to the pot.

  7. Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender and the vegetables are cooked through.

  8. Season with salt and pepper, to taste.

  9. Serve hot.
