  • 1 1/2 pounds small potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, boil the potatoes until they are fork-tender, about 10 minutes. Drain and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

  3. Add the cooked potatoes to the skillet, along with dried thyme, dried oregano, salt, and black pepper. Stir well to coat the potatoes evenly with the herbs and spices.

  4. Cook the potatoes for about 10 minutes, stirring occasionally, until they are golden brown and crispy on the outside.

  5. Remove from heat and garnish with fresh parsley. Serve hot.
