Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, sliced
  • 1 celery stalk, sliced
  • 4 cups of vegetable broth
  • 1 cup of water
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

  2. Add the carrot and celery and cook for another 2 minutes.

  3. Stir in the vegetable broth, water, bay leaf, and dried thyme. Bring to a boil.

  4. Reduce heat to low and let simmer for 10 minutes.

  5. Add the shrimp to the pot and cook for 5 minutes or until they turn pink and opaque.

  6. Season with salt and pepper to taste.

  7. Remove the bay leaf and discard.

  8. Serve the shrimp soup hot, garnished with fresh parsley.
