Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 can of white beans, rinsed and drained
  • 4 cups fresh spinach leaves
  • 1 cup vegetable broth
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 2 cloves of garlic, crushed
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onion and minced garlic, sauté until fragrant and translucent.

  2. Add the white beans, spinach, vegetable broth, paprika, cumin, salt, and pepper to the skillet. Stir well to combine.

  3. Reduce heat to low and simmer for 15-20 minutes, or until beans and spinach are tender.

  4. In a small bowl, combine Greek yogurt, crushed garlic, and lemon juice. Stir until well mixed.

  5. Serve the rustic beans and spinach in individual bowls, topped with a dollop of garlic yogurt sauce and a sprinkle of fresh parsley.
