How To Make Spinach Dhal with Harissa Yogurt

Ingredients
- 1 cup yellow lentils, rinsed
- 2 cups water
- 1 tbsp ghee or oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp red chili powder (optional)
- 2 cups fresh spinach leaves, chopped
- Salt to taste
- For the Harissa Yogurt:
- 1/2 cup Greek yogurt
- 1 tbsp harissa paste
- 1 tbsp lemon juice
- Salt to taste
Instructions

In a pot, add the yellow lentils and water. Bring to a boil, then reduce heat and simmer until lentils are cooked and tender, about 20 minutes.

In a separate pan, heat ghee or oil. Add the chopped onion and cook until translucent. Add the minced garlic, cumin seeds, ground turmeric, ground coriander, and red chili powder. Cook for another minute until fragrant.

Add the cooked lentils to the pan and mix well with the spices. Mash the lentils slightly with the back of a spoon.

Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt to taste.

In a small bowl, combine Greek yogurt, harissa paste, lemon juice, and salt. Mix well.

Serve the spinach dhal hot, topped with a dollop of harissa yogurt sauce.
