  • 1 lb fresh spinach leaves
  • 1 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1/2 cup low-fat Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Wash the spinach leaves and remove any tough stems.

  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute.

  3. Add the spinach leaves to the skillet and cook until they wilt, about 5 minutes, stirring occasionally.

  4. Remove the skillet from the heat and let the spinach cool slightly.

  5. Transfer the cooked spinach to a food processor and pulse until finely chopped.

  6. Return the spinach to the skillet and stir in the Greek yogurt and Parmesan cheese. Cook over low heat until warmed through, about 5 minutes.

  7. Season with salt and pepper to taste.

  8. Serve the lighter creamed spinach as a delicious and healthy side dish.
