  • 4 salmon fillets
  • 2 tbsp of fresh tarragon, chopped
  • 2 tbsp of olive oil
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 4 medium-sized potatoes
  • 2 carrots
  • 2 parsnips
  • Vegetable oil for frying


  1. Preheat the oven to 400°F (200°C).

  2. Rub the salmon fillets with the chopped tarragon, olive oil, salt, and black pepper. Place them on a baking sheet lined with parchment paper.

  3. Cut the potatoes, carrots, and parsnips into thin slices or strips to make the chips.

  4. Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Carefully add the root vegetable chips and fry until golden and crispy. Remove with a slotted spoon and drain on a paper towel.

  5. Bake the salmon fillets in the preheated oven for 12-15 minutes, or until cooked through.

  6. Serve the tarragon salmon alongside the crispy root vegetable chips.
