Ingredients

  • 1 cup dried yellow split peas
  • 4 cups water
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the dried yellow split peas under cold water until the water runs clear.

  2. In a large pot, combine the rinsed split peas, water, chopped onion, minced garlic, bay leaf, and dried thyme.

  3. Bring the pot to a boil over medium-high heat, then reduce the heat to low and simmer for about 2 hours or until the peas are soft and mushy, stirring occasionally.

  4. Remove the bay leaf and use a blender or immersion blender to puree the mixture until smooth. If the pudding is too thick, you can add a little water or vegetable broth to thin it out.

  5. Season with salt and pepper to taste.

  6. Serve the pease pudding hot as a side dish with roasted meats or sausages.
