How To Make Mixed Vegetable Noodle Soup Recipe
A warm, comforting soup filled with colorful veggies and noodles.

Ingredients
- 4 cups vegetable broth
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 1 red bell pepper, chopped
- 1 cup sliced mushrooms
- 1 zucchini, sliced
- 1/2 cup frozen corn
- 1 tsp dried thyme
- 2 cups cooked noodles
- Salt and pepper to taste
Instructions

In a large pot, heat olive oil over medium heat.

Add garlic and onion and sauté for 2-3 minutes.

Add carrots, celery, and bell pepper. Continue to cook for 5-7 minutes until vegetables are slightly tender.

Add mushrooms, zucchini, and corn. Cook for another 5-7 minutes.

Pour in vegetable broth and dried thyme. Bring to a boil, then reduce heat and let simmer for 10-15 minutes.

Add cooked noodles and let simmer for an additional 5 minutes.

Season with salt and pepper to taste. Serve hot.
