Ingredients

  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 red bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 zucchini, sliced
  • 1/2 cup frozen corn
  • 1 tsp dried thyme
  • 2 cups cooked noodles
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add garlic and onion and sauté for 2-3 minutes.

  3. Add carrots, celery, and bell pepper. Continue to cook for 5-7 minutes until vegetables are slightly tender.

  4. Add mushrooms, zucchini, and corn. Cook for another 5-7 minutes.

  5. Pour in vegetable broth and dried thyme. Bring to a boil, then reduce heat and let simmer for 10-15 minutes.

  6. Add cooked noodles and let simmer for an additional 5 minutes.

  7. Season with salt and pepper to taste. Serve hot.
