How To Make Mixed Vegetable Pasta Recipe
Pasta mixed with assorted vegetables in a delicious tomato sauce.
Serves:
Ingredients
- 8 oz penne pasta
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 tomato, chopped
- 1 cup tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

Cook pasta according to package directions. Drain and set aside.

Heat olive oil over medium heat in a large pan. Sauté onion and garlic for a few minutes until softened.

Add chopped peppers and zucchini and cook for 5-7 minutes until tender.

Add the chopped tomato, tomato sauce, oregano, basil, salt and pepper. Stir and let it simmer for a few minutes.

Add the cooked pasta to the sauce and stir until well combined.

Serve hot.
