How To Make Mixed Vegetable Pasta Recipe

Pasta mixed with assorted vegetables in a delicious tomato sauce.

Serves:

Ingredients

  • 8 oz penne pasta
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 tomato, chopped
  • 1 cup tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook pasta according to package directions. Drain and set aside.

  2. Heat olive oil over medium heat in a large pan. Sauté onion and garlic for a few minutes until softened.

  3. Add chopped peppers and zucchini and cook for 5-7 minutes until tender.

  4. Add the chopped tomato, tomato sauce, oregano, basil, salt and pepper. Stir and let it simmer for a few minutes.

  5. Add the cooked pasta to the sauce and stir until well combined.

  6. Serve hot.
