Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 cup diced jicama
  • 1/2 red onion, diced
  • 1/2 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup chopped cilantro
  • 1/3 cup lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked shrimp, jicama, red onion, red bell pepper, jalapeno pepper, and cilantro.

  2. In a small bowl mix together the lime juice and olive oil. Pour it into the shrimp mixture and toss.

  3. Season with salt and pepper to taste.

  4. Chill in the refrigerator for at least 30 minutes before serving.
