Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh herbs (such as parsley, chives, or thyme)

Instructions

  1. In a large pot, add the potatoes and enough water to cover them. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
