  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (optional for heat)
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 1 cup cauliflower florets
  • 1 cup green peas
  • 1 cup chickpeas, drained and rinsed
  • 1 can coconut milk
  • 1 cup vegetable broth
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the oil over medium heat. Add the onion, garlic, and ginger and sauté until softened.

  2. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using) to the pot. Stir well to coat the onions and spices.

  3. Add the carrots, bell pepper, cauliflower, green peas, and chickpeas to the pot. Stir to combine everything.

  4. Pour in the coconut milk and vegetable broth. Season with salt to taste.

  5. Bring the curry to a simmer and cover the pot. Let it cook for 20-25 minutes, until the vegetables are tender.

  6. Serve hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
