- 1 large head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 2 teaspoons curry powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro, for garnish (optional)
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the cauliflower florets with olive oil, curry powder, garlic powder, salt, and black pepper, until evenly coated.

Spread the cauliflower out on a sheet pan, making sure to leave space between each floret.

Roast in the preheated oven for 25 minutes, or until the cauliflower is tender and lightly browned, stirring halfway through.

Remove from the oven and garnish with fresh cilantro, if desired. Serve hot.
