Ingredients

  • 1 lb green beans, trimmed
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, or until crisp-tender. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute, or until fragrant.

  3. Add the cherry tomatoes to the skillet and cook for 2-3 minutes, or until softened.

  4. Add the green beans to the skillet and toss to combine. Cook for an additional 2-3 minutes, or until heated through.

  5. Remove from heat and sprinkle the crumbled feta cheese over the top. Season with salt and pepper, to taste.

  6. Serve the green beans with tomato and feta hot as a side dish.
