How To Make Spinach & Green Bean Salad

Ingredients

  • 8 cups fresh spinach leaves
  • 2 cups green beans, trimmed and halved
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup toasted pine nuts
  • dressing:
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until tender-crisp. Drain and rinse with cold water.

  2. In a large salad bowl, combine the spinach, blanched green beans, cherry tomatoes, red onion, feta cheese, and toasted pine nuts.

  3. In a small bowl, whisk together the olive oil, white wine vinegar, mustard, salt, and pepper.

  4. Pour the dressing over the salad and toss well to combine.

  5. Serve immediately and enjoy!
