How To Make Spinach & Green Bean Salad

Ingredients
- 8 cups fresh spinach leaves
- 2 cups green beans, trimmed and halved
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup toasted pine nuts
- dressing:
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Bring a pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until tender-crisp. Drain and rinse with cold water.

In a large salad bowl, combine the spinach, blanched green beans, cherry tomatoes, red onion, feta cheese, and toasted pine nuts.

In a small bowl, whisk together the olive oil, white wine vinegar, mustard, salt, and pepper.

Pour the dressing over the salad and toss well to combine.
