Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cloves of garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

  2. While the potatoes are cooking, heat the olive oil in a small pan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

  3. Drain the potatoes and return them to the pot. Mash them with a potato masher until smooth.

  4. Stir in the garlic and olive oil mixture, chopped basil leaves, and season with salt and pepper to taste.

  5. Serve the Garlic, Basil & Olive Oil Mash hot as a side dish with your favorite main course.
