How To Make Tomato Penne with Avocado

Ingredients
- 8 oz penne pasta
- 2 ripe avocados
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.

Add cherry tomatoes to the skillet and cook until they start to soften, about 3 minutes.

In a medium bowl, mash the avocados until creamy. Add the mashed avocados to the skillet and stir well.

Add cooked penne pasta to the skillet and toss until well coated with the avocado sauce.

Stir in chopped basil and grated Parmesan cheese. Season with salt and pepper to taste.

Cook for an additional 2 minutes until the dish is heated through.

Serve hot and garnish with extra basil and Parmesan cheese if desired.
