Ingredients

  • 1 cup dried lentils
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red chili, seeded and chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 cup vegetable broth
  • Juice of 2 tangerines
  • Zest of 1 tangerine
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.

  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and chopped red chili. Cook until the onion is translucent and the chili is softened.

  3. Add the ground cumin, ground coriander, and paprika to the pot. Stir well to coat the onion mixture with the spices.

  4. Add the rinsed lentils to the pot and stir to combine with the spiced onion mixture.

  5. Pour in the vegetable broth and tangerine juice. Bring to a boil, then reduce the heat and simmer for about 25-30 minutes, or until the lentils are tender.

  6. Stir in the tangerine zest and season with salt and pepper to taste.

  7. Serve the chili and tangerine braised lentils hot, garnished with fresh cilantro.
