Ingredients

  • 1 cup black lentils
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (optional)
  • 2 cups vegetable broth
  • 1 cup diced tomatoes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the black lentils under cold water and set aside.

  2. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until translucent.

  3. Stir in cumin powder, paprika, turmeric powder, and cayenne pepper (if using). Cook for an additional minute to toast the spices.

  4. Add the lentils, vegetable broth, and diced tomatoes to the pot. Season with salt and pepper to taste.

  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 45 minutes, or until the lentils are tender and the liquid has thickened.

  6. Serve the braised black lentils hot, garnished with fresh cilantro. Enjoy as a main dish or as a side with rice or bread.
