How To Make Quick Braised Chard & Lentils

Ingredients
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 bunch Swiss chard, stems removed and leaves chopped
- 1 cup dried lentils, rinsed and drained
- 2 cups vegetable broth
- Salt and pepper to taste
- Optional toppings: crumbled feta cheese, chopped fresh herbs, lemon wedges
Instructions

In a large skillet, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and cook for 2-3 minutes until softened.

Add the chopped Swiss chard leaves to the skillet and cook for another 2-3 minutes until wilted.

Stir in the dried lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender.

Season with salt and pepper to taste.

Serve the braised chard and lentils hot, topped with crumbled feta cheese, chopped fresh herbs, and a squeeze of lemon juice if desired.
