How To Make Quick Braised Chard & Lentils

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 bunch Swiss chard, stems removed and leaves chopped
  • 1 cup dried lentils, rinsed and drained
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Optional toppings: crumbled feta cheese, chopped fresh herbs, lemon wedges

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and cook for 2-3 minutes until softened.

  2. Add the chopped Swiss chard leaves to the skillet and cook for another 2-3 minutes until wilted.

  3. Stir in the dried lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender.

  4. Season with salt and pepper to taste.

  5. Serve the braised chard and lentils hot, topped with crumbled feta cheese, chopped fresh herbs, and a squeeze of lemon juice if desired.
